Chicken/Avocado Quesadillas

My family loves Tex-Mex!  Living here in West Central Texas, we have tons of Tex-Mex available to us from some very good restaurants.  However, I try to imitate as much as I can those things that we have found around town.  In some cases, I create my own!

This recipe I created, drawing the idea from some other recipes.
I didn’t get a picture again, but these were some of the best quesadillas I have ever had.  Definitely adding to the recipe book!  Also, please keep in mind, this recipe fed my small family.  For a family larger than four people, double to ingredients.

What you need:
Flour tortillas
2 C cooked, shredded chicken
1 lime, cut in half
4 slices bacon, cooked till dry and crispy, broken in halves
1 large tomato, deseeded, diced
2 C shredded cheddar cheese
1 avocado, pitted, sliced
1 can refried beans, cooked
1/4 cup cilantro, chopped
1/2 C sour cream
salsa

In small bowl, mix sour cream, and cilantro with the juice of one half of the lime.  (I saw the recipe for this sour cream mixture on FoodNetwork.com a while ago, and have not had a chance to try it out till now.)
Set aside.

Preheat skillet, reduce to medium-low heat.
Spread refried beans around one tortilla, place tortilla side down in heated skillet.
Spread thin layer of shredded chicken, top with avocado slices, a portion of chopped tomatos, some of the bacon, and a layer of shredded cheese.
Spread refried beans on another tortilla, place tortilla on top, beans side down.

Press two tortillas together using large flat spatula.
Heat in skillet until bottom tortilla is lightly browned.  Flip, and do the same to the other side.

Remove from skillet. Cut into four wedges.  Serve with Cilantro-Lime Sour Cream and Salsa while the quesadilla is still warm.

Repeat process till everyone is served.
