Parmesan/ Bacon Chicken Meatballs and Wild Rice

Still on our quest to move away from beef products (which I have discovered I AM allergic to), and in an effort to move away from processed foods, I stumbled upon some Pinterest Inspiration- Chicken Meatballs.


Below is MY version- no garlic, so salt, no parsley.

What you need:
1 pound ground chicken
1 cup shredded fresh Parmesan cheese
1 cup fresh bacon bits
1 tablespoon Creole seasoning
2 T olive oil

In a bowl, crumble the ground chicken.  Mix in cheese, bacon bits and seasoning.  Mix well, and form into gold-sized balls.  Flatten just a bit.

On stove top, in well-greased, heated pan, heat olive oil.   Add meatballs.  Brown on one side for 5-7 minutes over medium heat, then flip over and brown other side for same time.  Remove finished meatballs and allow to rest on paper towels.

Serve with wild rice and tossed salad.

(I had never made chicken meatballs before and was unsure how long to cook them.  Mine came out just a hair dry, so I have adjusted the cook time above to reflect that.  However, just watch them, you can decide what time works best for you.)
