Radish-Avocado Salad

We recently joined Bountiful Baskets, a Nationwide fresh produce co-op, to get better produce for a better price.  This week, much to my frustration, included were two bunches of radishes.  ((I have not like radishes since I was a child… and to be honest have not tried them again till this evening.))  Not wanting to let them go to waste I found a recipe that sounded promising and changed it to fit our tastes. 

This is what we ended up with, and I have to say, this is one of the best lettuce-free salads I have had in a very long time!

What you need:
1 bunch of radishes
1 small onion
1 avocado
1/4 C lime juice
chopped cilantro (to taste)
sea salt (to taste)

What to do:
Wash, clean, and julienne radishes.
Mix in bowl with lime juice.

Dice onion.
Peel, pit, and slice avocado.

Mix onion, avocado, and cilantro lightly with radishes in lime juice.
Salt lightly.

Serve immediately.

I served it with baked salmon.  It was a huge hit!  A super refreshing and crisp salad!
