Italian Tuna Salad

7 Mar

I created this recipe while trying to take part in a challenge cutting out seven major foods.  This recipe is dairy free, gluten free, and soy free.  An incredible recipe to keep handy for hot summer days when you really do NOT want to be standing over a hot stove or oven.

What you need:
1 green pepper, diced
1 red pepper, diced
1/4 red onion, diced
2 cans tuna (in water), drained and broken up
1/4 C Italian dressing
garlic-pepper- to taste
salt- to taste
Salad greens

In medium sized bowl, mix peppers, onion, tuna, and dressing.  Season to taste.  Chill for ten minutes.

While tuna salad is chilling, spread salad greens on plate.  Top with two spoonfuls of tuna salad.

Serve immediately.
