Black Bean Soup

I created this recipe last night literally just throwing it together as I went.  I added absolutely no salt or pepper or any other seasoning beyond the cilantro and the natural flavors of the other incredients.

This was quick to make and super yummy!

What you need:

3 cans black beans
1 can Rotel- Mexican Cilantro Lime
1 C frozen corn
2 C cooked and chopped chicken
1/2 C chopped cilantro
1 C chicken broth from cooked chicken

In medium soup pot, bring undrained black beans, Rotel, corn, and chicken broth to a boil.

Stir often to keep beans from sticking to the bottom.

Once the soup reaches a boil, turn heat down to low.

Stir in chicken.  Cook on low for 30 minutes.

Just before serving mix in cilantro.

Serve hot with warmed tortillas and salsa.

((I added a spoonful of sour cream to each bowl as well.))
