Dinner Crepes

A new recipe in our home.   I was raised eating crepes, instead of pancakes, for breakfast.  I found the recipe for crepes, and wondered how they would be for dinner!  My family loved them!  So this recipe is a keeper!

What you need:
1 C flour
1 and 1/2 C milk
2 eggs
1 tsp olive oil
1/2 tsp salt
1 T hot sauce

Preheat lightly oiled skillet.

Combine ingredients in bowl.

Pour approx. 2 tablespoons of batter into pan.  Lift pan to spread batter around.

Brown crepe on one side.  (I also brown the other side, but if crepe is cooked thoroughly, this is not necessary.  Your preference.)

Remove crepe.

Repeat with remaining batter.

Filling ideas:
Crepes traditionally are wrapped around some sort of filling.
Because our crepes were on the savory side, we filled ours with the following:

Leftover, shredded roast pork
Shredded Cheddar Cheese
Salsa
Sour Cream

Served with a light salad- we all had seconds, and used up the last of the leftover roast!  WooHoo!  No more wasted roast!!!
