Pork Roast Casserole

Great idea for leftover roast meat!
Found this idea online and adjusted it to fit our preferences.

What you need:
3 C leftover roast, shredded or chopped
2 cans cream of celery
1 small bag of frozen mixed vegetables
3 C mashed potatoes
1 C shredded Cheddar cheese

Preheat oven to 350 degrees.

Mix frozen vegetables with cream of celery.
Spread into bottom of 9″ x 13″ baking dish.
Spread leftover meat over vegetables in a single layer.
Spread mashed potatoes over meat, use spatula to make layer even.

Bake at 350 for 30 minutes.

Sprinkle shredded cheese over top of casserole.

Bake additional 10 minutes.

Remove casserole and let sit for five minutes before serving.

I just made this last night for the first time.  It was easy, quick, and a great way to use up roast meat that we usually get tired of eating after a couple days.
