Baked Salmon with Broccoli Slaw

This is one of our family favorites.  This recipe is especially good on a hot summer’s day!  Super fast and easy to make!

What you need:
1 lb fresh salmon, rinsed
Citrus seasoning

1 bag broccoli slaw
2 stalks celery, washed
1 C dried cranberries
1 C chopped almonds
1 pk Ramen noodles (crushed)

Vinaigrette:
3 T Olive Oil
1/4 C Red Wine Vinegar
1/8 C sugar (I use less than the recipe I was given- I prefer a more tart vinaigrette to balance the cranberries)
1 season packet from Ramen noodles

Preheat oven to 350 degrees.

On lightly greased baking dish arrange salmon.

Sprinkle with citrus seasoning.  We use Durkee Citrus Grill. 

Bake, uncovered, for 15-20 minutes to your preference.


In large bowl, mix broccoli slaw, chopped celery, cranberries, almonds, and crushed noodles.

In separate bowl, whisk oil, vinegar, sugar, and seasoning.

Wait to mix the vinaigrette into the salad till just before you are ready to eat.

Serve salmon and salad together.

Additions:
Add a can of drained mandarin oranges to the salad.
Sprinkle fresh lemon juice over salmon as soon as pulling it out of the oven for an extra bit of tartness.
